Pablo Romero worked in the kitchens any chef would dream of before opening his own.
He trained with Jean Louis Neichel and worked alongside the Monje family at Vía Veneto. He cooked next to Santi Santamaria at Evo. He spent five years in London, between Cambio de Tercio and Jamie Oliver's fine-dining restaurant. Then Sydney, at the Porteño grill. In 2019 he returned to Barcelona to open Tragaldabas, the space where technique serves the produce, not the other way around.
